而家一开机就弹咗个email及入password出来想请问怎样取消佢

I though he should go into the Email.app preferences and check the box like remember password.

可能是 password file 损坏或有不正确的旧档。
Goto Utility/KeyChain Access
选左栏的 Password, 找 email Internet Passwords (imap, smtp)，删除!
在 Mail 再入过
回到 Keychain Access, menu bar/Keychain First Aid, repair.
